7-8 eggs
1 tbsp white vinegar
For the curry sauce:
1 tbsp ghee or coconut oil
1 red onion, finely sliced
2 tomatoes, diced
1 inch ginger, grated
4 cloves garlic, minced
1 inch cinnamon stick
5-6 cardamom pods
4-5 curry Leaves
2 tsp ground coriander
1 tsp Sri Lankan masala (I substituted with garam masala here as I didn't have the Sri Lankan version!)
1 tsp chilli powder (or adjust to your spice preference)
1/2 tsp turmeric powder
1 can full fat coconut Milk
Salt to taste
For garnish and serving
Handful of coriander (cilantro), finely chopped
1 tbsp chilli oil, optional
Cooked basmati rice
